Will a fondant cake be too difficult to tackle for a first time baker?

I was going to use the simple marshmallow fondant recipe and make a cake for my son's birthday. I'm not a great cook and have hardly ever baked, so do you think I'll be in over my head? Any tips or suggestions?

I think it's funny how many people don't like fondant. It's really a great icing to use because it doesn't require years of practice to build up skills, the way that buttercream does. If you use a good fondant or make your own, it tastes good. When it's applied as a thin layer over buttercream, it blends into the buttercream and is not at all unpleasant to eat. It holds up to heat well, too.

One thing to be sure you do is level your cake. After it cools, take a cake leveler or a sharp knife and trim off the domed part, so that you have a flat surface to work with.

You can flavor marshmallow fondant. This week I made butter rum, raspberry and tootsie roll flavors of fondant. For the tootsie roll flavor, I replaced 1/2 c of the powdered sugar with 1/2 cup red cocoa powder. I used Lorann oils for the butter rum and raspberry flavors...one tiny bottle per batch.

Since it will be your first time working with fondant, plan on finishing the cake the day before the birthday party. The fondant will keep the cake moist, and if something happens and the cake isn't turning out like you want, you'll have a day to figure out something different.
